Honig for the Holidays

As the first snow starts to gather on the front steps and shoveling in the bitter cold becomes all too real, I for one could use a drink.

Tonight, I thank my lucky stars that I can open up a bottle of Honig 2007 Cabernet Sauvignon.

Honig, based in Napa Valley, is at the cutting edge of sustainable winemaking practices in California.  They pioneered the “Green Report Card” which measures each aspect of the winemaking process against standards of environmental sustainability.

Michael Honig, President of Honig Winery said, “We have long focused on sustainable business practices, but now we’ve taken a new approach.  By issuing an annual Green Report Card, we are personally and publicly taking stock of what we’ve accomplished and what we need to do to meet our green goals. We hope others will follow our lead to track and report on their green efforts.”

For Honig, it’s not enough to practice organic winemaking or to operate on green energy harnessed from their innovative solar panels and wind turbines—they want to be held accountable and maintain transparency to the consumer.

The result of Honig’s attention to detail is a flight of delicious wines that lift the spirit and bring a smile to one’s face. They make only one white (Sauvignon Blanc) and one red (Cabernet Sauvignon) wine, and they make them very well.

This summer I enjoyed the Honig Sauvignon Blanc on many a warm evening and it quickly became my favorite Sauvignon Blanc.

The 2007 Cabernet is just as good; with the first sip it warms the soul and delights the palate.  I think of this as a comfort wine, to be enjoyed with good food and good company.

The mouth echoes the enticing aromas of deep cherry, black pepper, and clove present in the nose but also brings anise and raspberries into the mix for the long, lingering finish.

The tannins are powdery and chocolaty, like a fine cocoa powder.

As amazing on its own as with a filet mignon, this is a Cabernet not to be missed.  After just one glass of this wine, the snow outside looks a little less daunting and a little more magical.

So, whether you’re looking for those last minute gifts or the perfect bottle for your next Holiday gathering, let Honig 2007 Cabernet Sauvignon be the end of your search.
